INGREDIENTS

·      2 cloves garlic

·       1tbs Olive Oil

·      2 tablespoons sesame seeds

·      2 Avocados

·      2 cucumbers

·      100g salmon fillet ( skinned & boned)

·      1 knob fresh ginger ( peeled and sliced)

·      2 tablespoons soy sauce

·      1tbs mirrin

·      1 tablespoon rice wine vinegar

·      Fresh Mint

·      Fresh Coriander

METHOD

For the dressing finely cut 1 knob of fresh ginger add 2 tablespoons of soy sauce, 1tbs of mirrin and the diced slamon into the dressing and set aside for 10mins.

1. Thinly slice 2 cloves of garlic and put into a cool pan with a good splash of olive oil then add 2 tablespoons of sesame seeds.

2. Cut 2 avocados into quarters then cut into even cubes

3. Cut two de-seeded cucumbers into quarters

4. Turn heat up on pan and add cucumbers, toss and simmer for 2 minutes

5. Add cubed avocado to the cucumbers and add 1 tablespoon of rice wine vinegar – quickly toss and add to salmon and dressing then add some picked fresh mint and fresh coriander.

6. Toss and serve.
