INGREDIENTS

 

·      200g Beef tenderloin

·      2 Rockit apples (finely sliced)

·      fresh ginger (finely sliced)

·      kale (finely sliced)

·      Parmesan cheese

·      Olive oil

·      1 tablespoon Kikkoman soy sauce

·      1 tablespoon mirin

 

METHOD

 

Season the beef well and sear quickly in a hot pan making sure to get a good golden brown colour. Remove from heat and allow to rest.

 

Finely slice 2 Rockit apples, toss with ginger and kale. 

 

Make a simple dressing by mixing the soy, mirin and olive oil in equal parts.

 

Thinly slice the meat as fine as you can whilst keeping its shape. Lay them on your serving plate spread neatly apart and add the dressing.

 

To serve: Place the salad on top of the sliced beef and add a layer of finely grated quality parmesan cheese.
