INGREDIENTS

  • olive oil

  • 4 cloves of garlic (chopped)

  • salt to taste

  • 2 shallots (chopped)

  • ½ onion(chopped)

  • 2 kaffir lime leaves(deveined and chopped)

  • ½ stick lemon grass (chopped)

  • chilli paste 1tsp

  • turmeric 1tsp

  • coriander 1tsp

  • cumin mix 1tsp

  • 3 large red chillies (chopped)

  • palm sugar 2 tablespoons

  • fish sauce 2 tablespoons

  • soy sauce 2 tbs

  • basil leaves 1 small bunch, chopped

  • coconut cream 1 cup

  • pre-cooked Omega Seafood’s Gourmet Mussels

  • pre-cooked Omega Seafood’s Littleneck Clams

 

METHOD

  1. To make curry paste: pour olive oil into a cold pan and add garlic, salt, shallots, onions and half the kaffir lime leaves and half of the lemon grass. Bring the heat ip and gently colour.

  2. Add spices: chilli paste, turmeric, coriander, cumin and red chillies and half the coriander. Mix well and cook slowly over a low heat.

  3. After 1 minute, add fresh coriander and palm sugar. Once this has melted, add fish sauce and a good splash of Kikkoman soy sauce.

  4. Blend until smooth- transfer back to the bot and then add one cup of Fia Fia coconut cream and bring to the boil.

  5. To make garnish: in a bowl place remaining kaffir lime leaves, lemon grass, fresh herbs. Set aside.

  6. Lightly re-heat the pre-cooked Omega Seafood’s Gourmet Mussels and Omega Seafood’s Littleneck Clams, pop them into a hot pan add a tablespoon of their liquid allow to  steam for 2 minutes.

  7. To serve: Pour curry sauce over the mussels and the clams and sprinkle over the garnish.
